Boston, MA South Station Tower, owned and developed by Hines, has celebrated the opening of The Moseley, Proper Fare, and a signature bar & lounge, marking hospitality group Episcope Hospitality’s debut to the city. Led by restaurateur David Morton of the legendary Morton’s Steakhouse Family, Episcope introduces three dining concepts within the 51-story mixed-use tower above to one of the city’s busiest transportation hubs, bringing its hospitality-driven approach to one of the city’s newest destinations.
The new concepts create a new dining destination downtown, offering everything from elevated casual fine dining and handcrafted cocktails to chef-prepared grab-and-go fare. Welcoming residents, office tenants, and the surrounding community, the openings are South Station Tower’s first food and beverage offerings and introduce a new gathering place in the heart of downtown.
“The opening of these exceptional dining concepts marks another important milestone in bringing South Station Tower’s vision to life,” said Sarah Hawkins, senior managing director and head of Hines’ US East Market.
“Episcope Hospitality has created destinations that complement the building’s premier office and residential spaces while introducing a vibrant new amenity for the broader downtown community. Together, they further establish South Station Tower as a place to live, work, connect and experience the best of Boston.”
Anchoring the culinary program is The Moseley, Episcope’s casual fine dining restaurant named for Alex Moseley, a 19th-century leather dealer who helped shape the neighboring Leather District. Open to the public, the restaurant spans nearly 10,000 s/f with seating for over 200 guests and offers an elevated yet approachable dining experience ideal for business lunches and after-work gatherings, social dinners with friends and family, and private events.
The menu showcases refined seasonal dishes including the Little Gem Salad with grapefruit, Cara Cara oranges, quinoa, avocado and crushed pistachios; Tuna Hamachi Poké Bowl featuring sushi rice, avocado, wasabi peas and soy-lime vinaigrette; Cavatelli Bolognese with freshly grated pecorino and dried oregano; and Chicken Paillard, available grilled or crispy with arugula, frisée, toasted almonds and Camembert. The beverage program features a signature craft cocktail menu, local beers and an extensive wine selection, with standout cocktails including A Proper Spritz, Hot & Bothered, Smoke Show, Aged & Confused, and Herb Your Enthusiasm.
Situated on the ninth floor of South Station Tower, The Moseley offers a distinctive setting above the energy of one of Boston’s busiest transportation hubs. Designed by Perkins&Will x A+I, the restaurant pays homage to the craftsmanship and commercial history of Boston’s neighboring Leather District, drawing inspiration from the form and materiality of 19th-century train cars while blending traditional influences with modern design. Curved white oak ceilings, paneled walls and dark bronze detailing create a warm, sophisticated atmosphere, while large dark bronze and fluted-glass bi-fold doors allow the dining room to seamlessly transition between one expansive space and more intimate settings for private events. The restaurant also features an outdoor terrace with lounge and dining seating, accented by thoughtfully integrated greenery, providing an inviting setting overlooking downtown Boston.
Designed for South Station Tower’s office tenants and residents, Proper Fare is a 5,500 s/f market and eatery offering an elevated grab-and-go dining experience throughout the workday. The concept features premium coffee, sandwiches, salads and chef-prepared meals, including highlights such as the Turkey Avocado Club, Smashburger, and a customizable salad bar. Ample seating is also available for casual in-market dining. Nearby, a signature bar & lounge offers a sophisticated extension of The Moseley for tenants and residents, with an intimate setting for everything from a mid-day coffee to evening cocktails and light bites. Located within the building’s Sky Bridge, the space is designed as a flexible destination for gathering throughout the day, anchored by a striking oval bar featuring champagne metal accents, quartzite countertops and lush hanging planters.
Residents and office tenants of South Station Tower can also enjoy exclusive hospitality amenities including catering services, in-home dining, priority reservations, preferred pricing and curated programming, further enhancing the building’s hospitality-driven lifestyle.
“We couldn’t be more excited to bring Episcope’s vision to a project that mirrors our mission to provide extraordinary, hospitality-driven experiences designed to enhance the days of tenants, residents, and the neighborhood alike,” said David Morton, co-founder and CEO of Episcope Hospitality. “We’re proud to make our Boston debut at South Station Tower and introduce these new concepts that we hope become part of the daily rhythm of downtown Boston.”
These openings bring Episcopes’ nationally recognized approach to hospitality to one of the city’s most transformative developments. The Chicago-based firm is known for transforming high-traffic environments into dynamic gathering places, including The Landing above Penn Station in New York and 2011 Crystal Drive in National Landing. This latest project also reflects Morton’s longstanding connection to Boston and his appreciation for its cultural and culinary landscape.
